Leek and Potato Soup

What are the ingredients?

Knob of butter or two tablespoons of cooking oil
One large potato, peeled and thinly sliced
One medium onion, peeled and thinly sliced
Three large leeks
One or two vegetable stock cubes dissolved in half a pint of water
10 fluid oz (284ml) of single or double cream

How is the soup prepared?

Heat butter or oil in large pan and add potato
Fry gentle until it begins to cook through
Add onion and sautee for five minutes
Add leeks and stir
Add stock water and milk, turn heat down, simmer with lid on the pan
When all the vegetables are soft add the cream and mix well
Use a hand blender to blitz all together to make a smooth soup, add more milk to adjust the thickness
Add salt and pepper to suit your taste
Serve hot or cold
