Courgette frittas
What are the ingredients?
250g courgettes, grated
20g plain flour
1 egg, beaten
25g finely grated parmesan, or vegetarian alternative (optional)
1 table spoon olive oil
170g tub roasted red pepper hummus, to serve Optional
How is the dish prepared?
Step 1
Combine the grated courgette, flour, egg and parmesan in a large bowl
Step 2
Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown.
Serve straight away with red pepper hummus.or Liz’s sourdough and butter
